These pancakes were pretty darn delicious. If you are willing to spend some extra time making these, its well worth it. They have oats and greek yogurt in them! I wouldn’t call these healthy…. but different! This recipe is from the lovely cookbook, The Newlywed Cookbook by Sarah Copeland. You can find it here . Also check out Sarah’s amazing blog here!
Blackberry Crush
- 2 cups of fresh blackberries
- 1/4 cup raw sugar
- 1/4 cup maple syrup
Pancakes
- 1 + 2/3 cups all-purpose flour
- 2/3 cup rolled oats
- 2 tbs sugar
- 1 + 1/4 tsp baking powder
- 3/4 heaping tsp baking soda
- 1/4 sea salt
- 1 cup greek yogurt, plus more for garnish
- 1 cup milk (I used 1%)
- 4 tbs unsalted buter, melted, plus more for the griddle/pan
- 2 large eggs
To Make The Blackberry Crush Topping:
In a large enough bowl, combine the berries and sugar and crush them together with a fork. Strain the juice into a small pot and set aside the berries. Heat the juice over medium heat and simmer, until it is thick and syrupy, about 5 minutes. Remove from the heat and add the maple syrup. Let it cool slightly, then pour over the blackberries and mix together. Set aside for now.
To Make the Pancakes:
Whisk together the flour, oats, sugar, baking powder, baking soda, and salt in a large bowl. In a separate bowl, whisk together the yogurt, milk, melted butter, and eggs. Make a well in the dry ingredients and whisk in the wet ingredients until well combined. The batter should be thick with bubbles on the surface. I don’t think I need to explain the rest, everyone knows how to make pancakes right? I used my griddle which is amazing, no more trying to flip them in a pan. Once your pancakes are ready, stack em up and add some more yogurt if you like, or just pour on some blackberry/syrup topping. Enjoy!

You’re right! As the creator of the recipe, I just wanted to pipe in and say these pancakes aren’t unhealthy at all. The Greek yogurt adds lots of protein and the oats are a whole grain that give long-lasting energy to these breakfast faves. I originally created the recipe with white flour so they are light and fluffy, but I just rewrote the recipe using White Whole Wheat flour which makes them even healthier.

P.S. I LOVE that you want to marry a blackberry. These pancakes came out of a weekend away with my husband picking blackberries, and I was “crushing” hard for he and them both.

Looks delicious! But, do you know of any interesting substitute for blackberries? They aren’t readily available, where I live.
Yes, yes! You can use blackberries, mulberries, raspberries or any of your favorite berries. Our neighbors made these for us this morning {SUPER flattering when your neighbor invites you for brunch and makes you your own recipe} and made a tripe berry crush with black, raspberries and blueberries. Delish! Sometimes I skip the crush and put blueberries right in the pancakes, too.

Hello, your oatmeal yogurt pancakes look delicious, but I won’t be able to try them because one of your ingredients is sea salt and the other is sugar. I am on my diet to lose, but I also take blood pressure medicine and the salt is a no no. But I will post this to my blog, some of the other bloggers might be able to give them a try or maybe able to switch some of the ingredients up so that there are not too many calories. Congrats on being Freshly Pressed–I was as well this week and could not believe the response so I’m sure you are thrilled to have one more comment to moderate! These pancakes pretty much tick off all the check boxes required to make up my new favorite breakfast. I make the family a decadent breakfast every weekend and this will certainly be a huge hit (perhaps with the exception of my wife who hates it when I make anything containing more than 200 calories).
