Oatmeal-Yogurt Pancakes with Blackberry Crush

These pancakes were pretty darn delicious.  If you are willing to spend some extra time making these, its well worth it.  They have oats and greek yogurt in them!  I wouldn’t call these healthy….  but different!  This recipe is from the lovely cookbook, The Newlywed Cookbook by Sarah Copeland.  You can find it here .  Also check out Sarah’s amazing blog here

From The Newlywed Cookbook

Blackberry Crush

  • 2 cups of fresh blackberries
  • 1/4 cup raw sugar
  • 1/4 cup maple syrup

Pancakes

  • 1 + 2/3 cups all-purpose flour
  • 2/3 cup rolled oats
  • 2 tbs sugar
  • 1 + 1/4 tsp baking powder
  • 3/4 heaping tsp baking soda
  • 1/4 sea salt
  • 1 cup greek yogurt, plus more for garnish
  • 1 cup milk (I used 1%)
  • 4 tbs unsalted buter, melted, plus more for the griddle/pan
  • 2 large eggs

To Make The Blackberry Crush Topping:

In a large enough bowl, combine the berries and sugar and crush them together with a fork.  Strain the juice into a small pot and set aside the berries. Heat the juice over medium heat and simmer, until it is thick and syrupy, about 5 minutes.  Remove from the heat and add the maple syrup.  Let it cool slightly, then pour over the blackberries and mix together.  Set aside for now.

To Make the Pancakes:

Whisk together the flour, oats, sugar, baking powder, baking soda, and salt in a large bowl.  In a separate bowl, whisk together the yogurt, milk, melted butter, and eggs.  Make a well in the dry ingredients and whisk in the wet ingredients until well combined.  The batter should be thick with bubbles on the surface.  I don’t think I need to explain the rest, everyone knows how to make pancakes right?  I used my griddle which is amazing, no more trying to flip them in a pan.  Once your pancakes are ready, stack em up and add some more yogurt if you like, or just pour on some blackberry/syrup topping.  Enjoy!

  1. Perhaps not “healthy” … but also not “unhealthy,” right?

These look amazing. I think I want to marry a blackberry right now — totally my favorite fruit of the moment.

    😉

  2. mmmm….they look delicious and nice photos too, I think presentation is half the battle when wanting to make something look attractive..:)

  3. These look amazing! Great timing, too! I was just considering substituting yogurt for sour cream in a family recipe for oatmeal sour cream pancakes! Thanks 🙂

    • Yes, yes! You can use blackberries, mulberries, raspberries or any of your favorite berries. Our neighbors made these for us this morning {SUPER flattering when your neighbor invites you for brunch and makes you your own recipe} and made a tripe berry crush with black, raspberries and blueberries. Delish! Sometimes I skip the crush and put blueberries right in the pancakes, too.

      • Thanks 🙂
I tried it with strawberries the other day, and they came really well. It’s really a great recipe.

  4. Mmmm…they look divine! Great idea, using oats and greek yoghurt. A little more fat with the yoghurt, but probably less milk/butter relative to other recipes anyway – ? Thanks for posting :o)

  5. Wow, those look absolutely wonderful! Beautiful photography, too. I think I’ll have to play around with this recipe and make it healthier! Can’t wait til Sunday morning…

Hello, your oatmeal yogurt pancakes look delicious, but I won’t be able to try them because one of your ingredients is sea salt and the other is sugar. I am on my diet to lose, but I also take blood pressure medicine and the salt is a no no. But I will post this to my blog, some of the other bloggers might be able to give them a try or maybe able to switch some of the ingredients up so that there are not too many calories. I enjoyed reading your blog, and I will come back soon!

  7. OMG!! they look insanely delicious.. just yuummm!!! im definitely going to try to make them, i think they look like they are worth the extra effort… thanks for sharing!!! 😀

  8. Congratulations on being freshly pressed! I love food photography and really enjoyed your post this morning.. I’m a follower now and look forward to seeing the rest of your blog:)

  9. Yummy. I want some now. Have you tired Mini Dutch pancakes? I call them little slices of heaven 😉

  10. Thank you this mouth watering post! Someone suggested adding raspberries – I agree; more color for the eyes and variety for the palate, lol. Congratulations on getting freshly pressed!

  11. Congrats on being Freshly Pressed–I was as well this week and could not believe the response so I’m sure you are thrilled to have one more comment to moderate! These pancakes pretty much tick off all the check boxes required to make up my new favorite breakfast. I make the family a decadent breakfast every weekend and this will certainly be a huge hit (perhaps with the exception of my wife who hates it when I make anything containing more than 200 calories). Keep em coming!

  12. wow my three favorite products together in once place. This is surely going to be a sugary good time. I also wanted to stop by and say congrats for being freshly Pressed!

  13. This is going in my favorites until I get a chance to make it. It sounds really good. I’m assuming that the greek yogurt gives it a slightly “buttermilk pancake” kind of tang. Is that right? I think my husband and boys will love it.

  16. Pancakes are my favorite food! These will surely make my list of favorites to make for sure! I can’t wait to try these myself. Thank you for sharing the wonderful recipe and your lovely food photos!

  18. YUM! I am going to have to make a whole wheat,low-fat, sugar free version of these. May not be quite as good, but bikini season is just around the corner! Thanks for the share. 🙂

  19. Oh my, this looks good. Not healthy? Oatmeal, Greek yogurt, and fruit? It gets my vote. Better than the chocolate chip pancakes with peanut butter sauce I devoured in .5 seconds last weekend!

  20. These look insanely delicious and I”m about to run out to the store right now and try to make them! Pancakes are my favorite and perfection takes time, so I look forward to making a few batches over the next few weekends! Keep them coming!

These look like they belong in the “dessert for breakfast” category. I’m sure they’re delicious nonetheless.

  22. I love pancakes and those look ah-mazing! I’m wiping my drool as I type this 😛 Can’t wait to try them myself!

  23. Blackberry crush sounds like a good idea- berries make breakfast better. Maybe I’ll make Raspberry Crush since blackberries from the grocery store are very tart.

  24. I just checked back on FP to find this blog post and made your pancakes. Yum! I give it 4 thumbs up. Both my husband and I LOVED them! I didn’t put the butter in the batter and they were super healthy!

  25. This recipe looks great, when the blackberries come into season here in MI we’ll have to give it a try. Check our our blog (mealsfromthemarket.wordpress.com) in June/July and you may find this recip reposted and commented on. I can’t wait to give it a go!!

  26. Ooh yummy!! This looks so good, deffo gunna give myself a treat and try this. After losing nearly 4 stone I think a treat is deserved.

Made these this morning without the blackberry crush. These pancakes are SOOOOO good! Even without the crush! My kids had syrup on them, I had fresh strawberries. They are so moist and so delicious! Adding them to the breakfast repertoire! 🙂
